Planta vivaç, de 30 a 120 cm d'alçària, amb arrels inflades en forma de fus, tiges estriades, fulles pinnaticompostes de color verd fosc i florida a l'estiu amb umbel·les de flors blanques i fa la llavor al setembre.
Conté entre un 4 i un 8% de sucre en forma de sacarosa. El gust de l'arrel és intermedi entre el de la pastanaga i la xirivia
Planta molt resistent a malalties insectes i al fred. Sembra a la tardor o a la primavera o multiplicació per divisió d'arrels. Necessita molta aigua però pot vegetar a l'ombra.
El conreu abans era molt comú però actualment no és gaire utilitzada. Va ser molt apreciada per Carlemany qui va ordenar el seu conreu i citada per Rabelais a Gargantua i Pantagruel.
Amb el nom francès de chervis el calendari republicà francès li dedica un dia de la tardor.

Die Zuckerwurzel (Sium sisarum), auch Gierlen, Görlin, Zuckerwurz, Süßwurzel oder Zuckermerk[1] genannt, ist eine Pflanzenart, die zur Familie der Doldenblütler (Apiaceae) gehört. Sie ist eine Nutzpflanze aus Osteuropa und Asien. Die Wildform ist vom Kaukasus bis nach Sibirien verbreitet. Der Name leitet sich vom süßen Geschmack der Wurzel ab.[2]
Sium sisarum wächst als mehrjährige krautige Pflanze.[3] Sie erreicht Wuchshöhen von 100 bis 150 Zentimeter.[4] Es wird ein Bündel weißer verdickter (etwa fingerdicker) Wurzeln gebildet, die den Wurzeln der Süßkartoffeln oder Dahlien[4] ähnlich sehen, jedoch deutlich dünner sind und eine Länge von 15 bis 20 Zentimetern erreichen,[5] einzelne sogar bis 30 cm.[6] Die mittlere Wurzel wird am stärksten ausgebildet.[7] Die Wurzeln sind grau bis weiß, das Fleisch weiß.[8] Sie sind zylindrisch und leicht spitz zulaufend. Es werden 10–15 Einzelwurzeln gebildet.[6], die einen etwas verholzten faserigen Kern haben.[9] Die Pflanze ist winterhart.
Die Laubblätter sind unpaarig gefiedert mit drei bis elf Fiederblättchen.[10] Die schmalen Fiederblättchen besitzen einen gesägten Blattrand. Bei jüngeren Pflanzen enden die Blätter spitz, bei älteren runder.
Zur Blüte kommt die Pflanze im Juli und August.[6] Sie werden erst im 2. Jahr nach der Aussaat gebildet.[3] Die Blüten stehen in endständigen doldigen Blütenständen zusammen. Die kleinen, duftenden Blüten sind sternförmig. Die Kronblätter sind weiß.
Die braunen Früchte sind kurz und ähneln denen der Karotten.[5] Ebenso wie bei Karotten haften die Teilfrüchte aneinander. Der Same ist 0,75–1 mm breit und dick und 2–2,5 mm lang.[6] Bei den Früchten handelt es sich um Achänen.[2]
Die Chromosomenzahl der Art ist 2n = 22.[11]
Das ursprüngliche Verbreitungsgebiet der Zuckerwurzel umfasst Westasien, Zentralasien, das Kaukasusgebiet, Rumänien, Bulgarien, das europäische Russland, die Ukraine, Moldawien und Ungarn.[12] Die Zuckerwurzel stammt wohl aus dem östlichen Asien.[13] Die meisten sehen China als Herkunftsland.[2] Sie war im Altertum in Europa noch unbekannt.[14] Jacobus Theodorus „Tabernaemontanus“ schreibt zwar in seinem Kräuterbuch von 1625: „Es soll der Keyser Tiberius, wie Plinius LIB.19.CAP5.28.schreibet/ ein solchen Lust zu diesen Rüblein zu essen gehabt haben, dass er sie alle Jahr am Rheinstrom bestellen lassen und im Italiam hab führen lassen, dann sie seindt dem Magen nütz und gut“. Auch Gerard (Herbal) und Lenz[13] zitieren die gleiche Stelle; Gerard nennt Sisarum als den lateinischen Namen und führt Gelduba (Gellep) als Herkunftsort an[15]. Hierbei handelt es sich aber wahrscheinlich um eine Verwechslung mit der Pastinake (Pastinaca sativa), ebenfalls ein Doldenblütler, da die Zuckerwurzel nicht in Deutschland heimisch war.
Die Zuckerwurzel kam erst im 15. Jahrhundert über Russland nach Europa.[9] Während der Renaissance sollen an englischen Tafeln erstmals Kuchen und andere feine Gerichte aus der Zuckerwurzel serviert worden sein. Auch zur Herstellung von Zucker wurde die Wurzel verwendet.[16], Marggraf veröffentlichte bereits 1747 entsprechende Versuche.[17] Bis Mitte des 19. Jahrhunderts wurde sie in Italien und Deutschland angebaut,[13] dann wurde sie durch die Kartoffel abgelöst.[2] und nur noch in Apothekergärten angebaut.[1] Heute ist die Zuckerwurzel in Europa weitgehend unbekannt und wird kaum noch angebaut[18]. Dies liegt vermutlich am faserigen Kern und der wegen der Form der Wurzel aufwändigen Verarbeitung.[9] In China, Japan und Korea wird sie dagegen nach wie vor kultiviert.[2] In Anatolien wird die Zuckerwurzel, wie viele andere Wildpflanzen, von Frauen auf speziellen „Frauen-Märkten“ verkauft.[19] Die Pflanze wurde bisher nicht züchterisch bearbeitet.
Die Kulturdauer beträgt 6–8 Monate.[5] Für den Anbau wird ein Standort mit leichterem nährstoffreichen Boden gewählt, der Längenwachstum der Wurzeln und das Ernten erleichtert.[6] Zuckerwurzel ist gut an mitteleuropäisches Klima angepasst. Die Pflanze verträgt keine Staunässe. Für die Kultur der Zuckerwurzel sollte der gleiche Fruchtwechsel eingehalten werden wie für Karotten, weil sie sich nicht gut selbst im Nachbau vertragen.[2] Vermehrt wird die Pflanze generativ über Samen oder vegetativ durch Wurzelabschnitte oder Teilung des Wurzelstocks.[4][1] Die Saat führt wegen der geringen genetischen Variabilität der Zuckerwurzel zu gleichmäßigen Pflanzen im Bestand.[9] Die Aussaat erfolgt im März auf nicht frisch (mit Stalldung) angereichertem Boden, oder schon im Herbst[4], da sie winterhart ist.[1] Der Vorteil der Herbstaussaat besteht im Wachstumsvorsprung, denn der Same keimt sehr langsam[20] und benötigt etwa 35 Tage.[6] Um die Keimzeit und -Sicherheit etwas zu verkürzen und zu verbessern, kann der Samen in Wasser vorgequollen (vorgekeimt) werden.[2] Danach wird er nochmals schonend etwas getrocknet, damit er säfähig (rieselfähig)ist. Der Reihenabstand für Saat ist auf 20–30 cm zu wählen.[5][2] Der End-Abstand in der Reihe soll etwa 15 cm betragen.[3][20] Gesät wird etwas dichter und auf 1,26 cm tief.[5] Für die Saat von 1 m² werden 4 g Samen benötigt.[20] Wenn die Pflanzen im 4-Blatt-Stadium sind, kann die Saat verzogen (vereinzelt) werden.[21] Die dabei gewonnenen Pflanzen können auch noch gepflanzt werden.[3] Oft wird auch auf Saatbeeten vorkultiviert und später verpflanzt.[8] Dies geschieht ebenfalls im 4- bis 5-Blatt-Stadium.[22] Vegetative Vermehrung führt schneller zu großen Pflanzen als die Aussaat. Dazu werden Wurzeln gewählt, die eine gute Form haben und möglichst groß sind, was bei mehrjährigem Anbauzyklus so die Sorte verbessert.[21] Die Pflanzung erfolgt 2 bis 4 Wochen (Ende März bis Anfang April) nach der Aussaat.[4] Die Teilpflanzen oder Wurzelteile werden in gleichem Abstand wie bei Saat auf 5 cm tief gepflanzt.[5] Danach verhält sich die Kultur gleich wie bei Aussaat. Düngung entspricht der der Karotten und sollte auf 2–4 Gaben gesplittet werden.[2] Während des Hauptwachstums benötigt die Zuckerwurzel viel Wasser.[4] Durch längere Trockenheit entwickelt sich verstärkt der faserige Kern in der Wurzel.[2]
Die Ernte erfolgt im Herbst oder im Winter. Für den Hausgebrauch können die Wurzeln in Sand eingeschlagen und im Keller eingelagert werden.[6][2] Nur junge Wurzeln der einjährigen Pflanze sind brauchbar.[20][6] Die mechanische Ernte erfolgt mit Maschinen wie sie auch für Chicorée-Wurzeln, Schwarzwurzel oder Karotten üblich sind.[23] Der Ertrag beträgt 1–2 kg/m².[2] Bussard gibt 1,2–1,5 kg/m² (120–150 kg/Are) an.[22] Auch das Treiben in dunklen Treibräumen für gebleichte Sprossen ist bekannt. So können die 10 bis 15 cm langen Sprosse 30 bis 40 g pro Pflanze erreichen.[24] Nach Gerard erfolgt die Ernte im März oder April, bevor die Pflanze austreibt[25].
Sobald die Samen auf den Dolden braun werden kann man letztere zum Trocknen abschneiden und geschützt nachtrocknen.[3] Dies ist von August bis Oktober gegeben.[22] Die Hauptreife erstreckt sich von August bis September.[6] Ein Gramm Samen enthält etwa 600 Korn und ein Liter Samen entspricht etwa 400 g. Die Samen sind drei Jahre keimfähig.[4] Samen sollten nur von Pflanzen im zweiten Standjahr genommen werden. Genauso wichtig ist die Entnahme von Pflanzen mit gewünschter Wurzelentwicklung. Als Zuchtziele gelten geringer Faseranteil im Wurzelkern, möglichst großer Durchmesser und Länge und guter Geschmack.[22] Am besten werden die Wurzeln vor der Vermehrung sortiert, eingelagert und im nächsten Jahr separat ausgepflanzt. Da die Pflanze mehrjährig ist, kann jedes Jahr Samen geerntet werden.[6]
Es kommen die meisten Krankheiten und Schädlinge vor, die auch bei Karotten, Pastinaken und Petersilie zugegen sind. Besonders Mäuse haben es auch auf die süßen Wurzeln abgesehen.[2]
In erster Linie wird die Pflanze als Wurzelgemüse verwendet. Die Wurzel wird in Wasser gekocht.[19] oder gebraten. Das Fleisch ist mehlig und schmeckt süß aromatisch[22]. Die einjährigen Wurzeln schmecken am besten.[2] Nach dem Kochen kann der faserige Kern leicht entfernt werden.[13] Nach Gerard kann sie auch in Butter oder Öl gebraten oder anderweitig zugerichtet werden, "according to the skill of the cooke, and the taste of the eater". Die frische Wurzel eignet sich zum Verzehr in rohem Zustand[26]. Aus den Wurzeln kann auch Branntwein hergestellt werden.[27] Die im Frühjahr austreibenden Blätter sind sehr aromatisch[9], sie können in Mischsalaten verwendet werden.[9]
Das rohe Wurzelfleisch enthält 4 bis 8 % Zucker (Saccharose) und eine Trockensubstanz von 16 %. Die Trockensubstanz enthält 63–65 % Sucrose.[9] Die Trockensubstanz der Blätter beträgt knapp 8 %, sie sind mit 25 beziehungsweise 12 % der Trockensubstanz reich an Proteinen und Zucker. Die Sprossen enthalten mehr Vitamine als die Wurzeln und der Vitamingehalt ist nach Produktion im Treibhaus höher.[28] Deshalb wurde sie viel angebaut, als Zucker noch selten und teuer war. Weiter enthält die Wurzel auch Mineralstoffe und Pektine.[23]
Die in Mitteleuropa heimische und mit der Zuckerwurzel verwandte Art Sium latifolium wurde bis ins 20. Jahrhundert als Heilpflanze genutzt.[23]

Sium sisarum, commonly known as skirret,[1] is a perennial plant of the family Apiaceae sometimes grown as a root vegetable. The English name skirret is derived from the Middle English 'skirwhit' or 'skirwort', meaning 'white root'. In Scotland it is known as crummock and in Irish cearrachán. Its Danish name sukkerrod, Dutch name suikerwortel [2] and German name "Zuckerwurzel" translate as 'sugar root'.
Skirret has a cluster of bright white, sweetish, somewhat aromatic roots, each approximately 15–20 centimetres (5.9–7.9 in) in length. These are used as a vegetable in the same manner as the common salsify, black salsify and the parsnip.[3]
The plant is of Chinese origin, but had arrived in Europe by Roman times. It is presumed to be the siser mentioned by Pliny the Elder as a favourite of the Emperor Tiberius,[4] though this may have also been a reference to a parsnip or carrot.
The twelfth-century Benedictine abbess Hildegard von Bingen discussed the medicinal properties of skirret in her work Physica:
A 1390 manuscript The Forme of Cury used by King Richard II of England's master cooks included two recipes for fritters that included 'skyrwates'.[2]
Maud Grieve in A Modern Herbal mentions that it has been cultivated in Great Britain since 1548 and is supposed to be a useful diet in chest complaints.[3] The seventeenth-century English herbalist Nicholas Culpeper said about the plant:[5]
John Gerard's Herball or General Historie of Plantes of 1633 describes skirret thus:
When boiled and served with butter, the roots form a dish, declared by the seventeenth-century agriculturist John Worlidge in 1682, to be "the sweetest, whitest, and most pleasant of roots".
Skirret grows about 1 m (40 in) high and is very resistant to cold, as well as pests and diseases. It can be grown from seeds, but may also be started from root divisions. The roots are best eaten when the plant is dormant during the winter, as in the spring, the roots become woody and covered with small hairs. Lack of moisture can also make the root more fibrous. The plant prefers sandy and moist soil.
The roots are scrubbed, cut into lengths, boiled, and served like parsnips or carrots. Skirret roots can be stewed, baked, roasted, fried in batter as fritter, or creamed, and also be grated and used raw in salads. A woody core may be present in some roots, though this seems to be variable in different plants. If present, it should be removed before cooking because it is difficult to remove after.
Put 125 g of bacon, chicken giblets of one chicken, and 8 garlic cloves into a stewing pan with 1 litre of water and cook 30 minutes, skimming often. Strain and reserve the bacon and giblets. Put the stock in a clean stewing pan with 3 cups (750 ml) of water. Add 500 g of green or brown lentils, 3 teaspoons of salt, and half a teaspoon of ground ginger. Chop the giblets and add this to the pot. Chop part of the bacon, enough to yield half a cup (50 g) and add this to the lentil mixture.
Cook 20 minutes over medium heat, then add 1 cup (100g) of sliced skirrets. Continue cooking until the skirrets are tender (about 15 minutes), then add a quarter cup of chopped parsley, half a cup of chopped spring onions, and a quarter cup of dill. Serve immediately in a bowl with the remaining piece of boiled bacon on top.

Oni ankaŭ povas manĝi la foliojn. Prefere uzu la junajn foliojn, kiuj estas tre aromaj. La radikoj estas rostataj en bakforno ĉe 180° ĝis ili estas orbrunaj.La folioj povas esti manĝataj krude ekzemple en miksita salato. El la radiko estas ankaŭ farebla brando.[15]
Rikoltitaj radikoj estas stokeblaj kelkajn semajnojn enmetitaj en sablo.[1]
La kruda radikkarno enhavas 4 ĝis 8 % da sukero (sakarozo) kaj seka substanco de 16 %. La seka substanco enhavas 63–65 % da sukerozo. La seka substanco de la folioj estas preskaŭ 8 % kaj ili havas je 25 % da proteino kaj 12 % da sukero. [16] Tial la planto estis multe pli kultivata, kiam la sukero estis rara kaj multekosta. La radiko ankaŭ enhavas mineralojn kaj pektino.[13]
Precipe la en Mezeŭropa hejmiĝanta specio Sium latifolium, kiu estas tre parenca al la sukerradiko estis uzata ĝis en la 20a jarcento kiel kuracplanto.[13]
La sukerradiko (Sium sisarum) estas plantspecio, kiu apartenas al la familio de la Apiacoj (Apiaceae). Ĝi estas malnova utilplanto el orienta Eŭropo kaj Azio. La origina sovaĝa formo estas disvastigita de la Kaŭkazo ĝis Siberio. La nomo sukerradiko venas de la dolĉa gusto de la radiko.
La escaravía (Sium sisarum), también llamada chirivía de azúcar, escaravía tudesca o sisaro es una planta de la familia de las apiáceas. Su raíz es comestible aunque en la actualidad se cultiva raramente.
Es una planta herbácea perenne que llega a alcanzar el metro y medio de altura y 40 centímetros de porte. Las flores, blancas y agrupadas en umbelas, son hermafroditas y se polinizan por insectos. La planta es autofecundable. Las hojas son lanceoladas, serradas y pinnaticompuestas, de color verde oscuro y brillantes. Los frutos son aquenios y las semillas tienen entre 0,75 y 1 mm de grosor por 2 a 2,5 de largo.
Posee una raíz tuberosa arracimada de un grosor de un par de centímetros con un núcleo fibroso no comestible. La carne es blanca y posee un sabor dulce próximo al de la zanahoria y la chirivía.
Es una planta resistente que crece bien en el clima frío y húmedo de Europa Central.
La planta es de origen incierto, probablemente de China o Asia Central.[2] En Europa hay indicios de su cultivo en la antigüedad al menos en las Islas Británicas, y posteriormente es mencionada en el Capitulare de villis vel curtis imperii de Carlomagno. Posteriormente es citada por Rabelais en Gargantúa y Pantagruel. El calendario republicano francés le dedicó el día 16 de Brumario.
A partir del siglo XVIII su cultivo cayó en desuso, siendo sustituida por la patata y otras especies. En la actualidad sólo se cultiva de forma esporádica, siendo China y otros países de extremo oriente los únicos que tienen una producción significativa.
Para su cultivo, la siembra se realiza mediante semillas o divisiones de la raíz,[3] hacia marzo, y la cosecha se realiza en otoño, aunque se puede retrasar gracias a la resistencia de la planta. El rendimiento es de entre 1,2 y 1,5 Kg/m².
La raíz se puede consumir cruda o cocinada pero debe retirarse el núcleo fibroso. También son comestibles las hojas tiernas, que se pueden consumir en ensalada. La carne de la raíz contiene un 4 a 8% de azúcar (sacarosa) y hasta un 63 a 65% una vez seca. Por este motivo fue cultivada en tiempos en los que el azúcar era cara o escasa.
Sium sisarum fue descrita por Carlos Linneo y publicado en Sp. Pl. 1: 251. 1753[4]

C'est une plante herbacée vivace, très rustique, à tiges rameuses, cannelées, dressées, qui peuvent atteindre 1,5 m de haut.
Les racines tubéreuses en fuseau, fasciculées, sont renflées, charnues, de couleur blanc grisâtre extérieurement. Elles ont la chair blanche et souvent le cœur fibreux.
Les feuilles sont pennatiséquées à folioles dentées, vert foncé, brillantes. Elles rappellent celles du panais.
Les fleurs, blanches, sont regroupées en ombelles.
Cette espèce est originaire d'Asie occidentale et centrale (Iran, Irak, Turquie, Arménie, Azerbaïdjan, Daghestan, Kazakhstan, Kirghizistan, Tadjikistan, Turkménistan) et d'Europe de l'Est (Moldavie, Russie, Ukraine, Bulgarie, Roumanie, Hongrie).
Selon certains auteurs, ce légume aurait été introduit en France vers le XVe siècle depuis l'Allemagne et la Russie.
Nécessite un sol frais, profond et bien ameubli. Multiplication par semis de préférence à l'automne (septembre-octobre), ou par division d'anciennes souches au printemps (mars-avril).
La récolte intervient de 6 à 7 mois après la plantation, à partir d'octobre, et peut s'étaler durant l'hiver, selon les besoins, jusqu'en mars.
Les racines, dont le goût sucré et légèrement farineux rappelle celui du panais, se consomment cuites, accommodées à la manière des salsifis ou des scorsonères.
Les jeunes pousses, étiolées à la manière des barbes de capucin, se mangent crues en salade.
Ce légume est peut-être celui cité sous le nom de silum dans le capitulaire De Villis au Moyen Âge et qui fut à l'honneur jusqu'au XVIIe siècle.

Marek kucmerka[6][7] (Sium sisarum L.) – gatunek byliny należący do rodziny selerowatych. W Polsce rzadko uprawiany jako warzywo[8], archeofit[9][6].
W wąskim ujęciu taksonomicznym w stanie dzikim nie występuje[10][11], a wyróżniany w takim ujęciu pokrewny gatunek, Sium sisaroideum (w innych uznawany za tożsamy[5][2]), występuje we wschodniej części Obszaru Śródziemnomorskiego oraz w Obszarze Irano-Turańskim[11], również w północnej Afryce[12]. Rośnie też jako introdukowany we Francji i Niemczech[5].
Roślina zawiera m.in.: luteolinę, kemferol, kwercetynę, izokwercytrynę, skopoletynę[19].
Roślina wieloletnia, liście pojawiają się w marcu, kwiaty w lipcu, nasiona dojrzewają we wrześniu[10].
20–22 chromosomy w sporoficie, 11 w gametoficie[20].
Wywodzi się z prawdopodobnie z dzikiego gatunku Sium sisaroideum[11] (zachodzi między nimi politomia[21], a według niektórych baz taksonomicznych taksony te uznawane są w istocie za jeden gatunek[2]) lub Sium lancifolium (Bieb.) Thell, który pozbawiony jest bulw[22]. Gatunek uprawny jest niekiedy określany jako Sium sisarum sisarum[10].
Roślina pochodzi ze wschodniej Azji[14][3]. Według Linneusza[23] i Edwarda Lewisa Sturtevanta (1842-1898) pochodzi z Chin[22]. Pojawiła się w Europie około X wieku[9].
Pierwsza nazwa polska, krucmorka, pojawiła się w 1389 roku[24]. Możliwe, że temat słowotwórczy –morka wywodzi się z niemieckiego Mehre (pol. marchew)[25], a słowo pochodzi z niemieckiej nazwy Kritzelmore[26]. Inne historyczne warianty nazw polskich marka kucmerki to: korzenie cukrowe[27], kucmerka, kucmorka, kucmerka swoyska, marek cukrowy korzeń, cruczmorka, slodiczka[28].
Pokrewny lub tożsamy (synonimiczny) dziki gatunek Sium sisaroideum występuje na terenach podmokłych[12][22], wzdłuż rzek, potoków źródeł, w paśmie reglowym[5].
Roślina uprawiana dla lekkostrawnych[31], słodkich w smaku[3] mączystych bulw[10] bogatych w węglowodany[16][32] i białko[31]. Smak surowej bulwy jest zbliżony do marchwi czy pasternaku, lekko orzechowy[5][10]. Warzywo polecane dla dzieci i dla osób ze schorzeniami przewodu pokarmowego[31]. W Turcji spożywa się także części nadziemne[33].
Zalecane jest usunięcie zdrewniałego, niejadalnego trzonu korzenia[13][3]. Bulwy można spożywać na surowo lub po ugotowaniu (np. w mleku[16]), duszeniu[3], pieczeniu, smażeniu[16][31], np. jako dodatek do zup[10] lub purée[31]. Prażone bulwy były używane jako surogat kawy[10]. Wywar z korzeni był w XVIII wieku poddawany fermentacji z wykorzystaniem drożdży w celu uzyskania napoju alkoholowego[16].
Marek kucmerka był wykorzystywany jako warzywo w Niemczech[30] i Anglii w XVI wieku[34]. W Polsce korzenie marka kucmerki były jadane co najmniej od czasów Jagiellonów, np. jako danie postne[13], podawano je np. z ryżem i rodzynkami[25]. Roślina ta była wówczas bardziej lubiana w polskiej kuchni niż marchew[35]. Jako warzywo była popularna w Polsce co najmniej do końca XVII wieku[35].
Do Europy trafił około X wieku[36], choć niektóre źródła uznają za prawdopodobne, że był uprawiany już przez starożytnych Rzymian[37]. Uprawiany jest również w Azji[11]. Gatunek w swym traktacie wymieniła Hildegarda z Bingen pod nazwą gerle[38]. W nowożytnej Europie marek kucmerka był uprawiany głównie w XVI[37] i XVII wieku[13], w XVIII wieku niemal całkowicie zaprzestano uprawy na rzecz ziemniaków[13][11][9]. W Polsce był uprawiany w średniowieczu jako warzywo dla słodkich bulw[9][6]. Wówczas pojawiał się na dworach królewskich[26][31]. Możliwe, że warzywo zostało przywiezione po raz pierwszy do Polski z Niemiec[26].
Żyzna i wilgotna gleba[10][37], lekka piaszczysta, lub średnia ilasta, o odczynie kwaśnym, obojętnym lub zasadowym. Nasłonecznienie pełne lub półcień[10].
Sadzonki z rozsadnika lub wysiew bezpośrednio do gruntu[3]. Możliwe rozmnażanie wegetatywne poprzez podział bulw[37].
Zbiór bulw późną jesienią lub wczesną zimą przed przymrozkami[37]. Bulwy powinny być przechowywane w chłodzie, mogą być trzymane w lodówce[37].
Gatunek jest sporadycznie uprawiany w Europie (np. w Wielkiej Brytanii[39]), również w Polsce[31]. Zbierany lokalnie w Chinach[14].
