Flash-fried whole scup

The scup (Stenotomus chrysops) is a fish that occurs primarily in the Atlantic from Massachusetts to South Carolina.[2] Along with many other fish of the family Sparidae, it is also commonly known as porgy.[3]

Scup grow as large as 18 in (460 mm) and weigh 3–4 lb (1.4–1.8 kg), but they average 0.5–1.0 lb (0.23–0.45 kg). Scup can live up to 20 years; females can begin to reproduce at the age of two.[4] Every year female scups lay approximately 7,000 eggs in sand and weed abundant areas.[5]

In the Middle Atlantic Bight, scup spawn along the inner continental shelf. Their larvae end up in inshore waters, along the coast and in estuarine areas. At two to three years of age, they mature. Scup winter along the mid and outer continental shelf. When the temperature warms in the spring, they migrate inshore.[6]

They are fished for by both commercial and recreational fishermen. The scup fishery is one of the oldest in the United States, with records dating back to 1800. Scup was the most abundant fish in colonial times Fishermen began using trawls in 1929, which increased catches dramatically. The species was termed overfished in 1996, and today there is evidence of a rebound. Today, scup are still caught primarily using an otter trawl.[7]

Cuisine

The flesh is "firm and flaky",[8] with a "sweet almost shrimplike flavor".[9] Many consumers like their light flavor and they are characterized as panfish. Popular methods of cooking include frying, broiling, and baking.

Though the flesh is similar to that of more prestigious fish in the sea bream family like daurade and orata, the names "scup" and "porgy" are sometimes considered unattractive, leading to culinary names like orata Americana and Montauk sea bream.[9]

Its similarity to Pagrus major and its mild and fatty characteristics makes it suitable for sushi.[10]

Management

Scup are heavily fished commercially and recreationally. Management measures for the species generally include size limits, bag limits, fishing seasons, and equipment requirements. Scup are also managed through quotas that are separately regulated during the different seasons.[11] In Massachusetts, management plans result in the distribution of 78% of the yearly permitted harvest of scups for commercial purposes, and 22% for recreational fishing.[5]

Fishing

Since scups are classified as anglers and tackle bait frantically, squid strips are the most common choice of bait because they stay intact and suspended on the hook after several strikes.[5]

Leefomgeving

Stenotomus chrysops is een zoutwatervis. De vis prefereert een subtropisch klimaat en leeft hoofdzakelijk in de Atlantische Oceaan. De diepteverspreiding is 0 tot 15 m onder het wateroppervlak. De vis vindt zijn voedsel nabij de waterbodem en eet vooral kreeftachtigen en andere invertebraten.

Relatie tot de mens

Stenotomus chrysops is voor de visserij van aanzienlijk commercieel belang. In de hengelsport wordt er weinig op de vis gejaagd. De soort kan worden bezichtigd in sommige openbare aquaria.

Voor de mens is Stenotomus chrysops potentieel gevaarlijk, omdat er vermeldingen van ciguatera-vergiftiging zijn geweest. Toch kan de vis goed gegeten worden.

Stenotomus chrysops är en fisk från familjen havsrudefiskar (Sparidae) som finns utanför USA:s östkust.

Utseende

Stenotomus chrysops är en avlång fisk med hög kroppsform, liten mun och tydligt ingröpt stjärtfena. Kroppen är kraftigt ihoptryckt från sidorna. Ryggfenan är lång, och består av en främre del med 12 taggstrålar och en bakre del med 12 mjukstrålar. Även analfenan består av både taggstrålar och mjukstrålar, 3 respektive 11 till 12. Både rygg- och analfenan kan fällas ner i en skåra. Kroppen är gråsilvrig, något ljusnande ner mot den vita buken, med och med 12 till 15 otydliga, blåglänsande längsstrimmor på sidor och rygg. Huvudet är silverfärgat med oregelbundna, mörka fläckar.[2] Som mest kan den bli 45 cm lång och väga 2,06 kg.[3]

Vanor

Arten lever vanligtvis i stim nära botten. Den är inte bunden till någon bestämd bottentyp, utan kan förekomma såväl på sandbottnar, rev, musselbäddar samt klipp- och stenbottnar.[4] Däremot förekommer en årstidsbunden migrering: Under våren drar sig fiskarna, först de äldre, större individerna, in närmare kusten, för att mot hösten vandra tillbaka till djupare vatten (omkring 35 – 150 m).[2]

Ålder

Arten blir könsmogen vid en ålder av 2 till 3 år[4] och kan leva i åtminstone 20 år[5].

Diet

Födan består av kräftdjur som märlkräftor, blötdjur, tagglösa sjöborrar (ordningen Clypeasteroida), havsborstmaskar, unga bläckfiskar samt små fiskar. De nykläckta larverna tar troligtvis djurplankton, för att senare gå över till en diet på mindre kräftdjur som märlkräftor och pungräkor, små mollusker samt fiskägg och -larver.[4]

Fortplantning

Stenotomus chrysops leker under vår till sommar (i den norra delen av utbredningsområdet maj till augusti, med tonvikt på juni) under vilken honan lägger omkring 7 000 ägg (varierande mellan 2 000 och 12 000)[4]. Äggen, som innehåller en oljedroppe och är pelagiska, kläcks efter 2 till 3 dagar beroende på vattentemperaturen.[2]

Utbredning

Fisken finns i Västatlanten från Nova Scotia i Kanada till Florida i USA; den är dock sällsynt söder om North Carolina.[3]

Kommersiell användning

Arten är en populär matfisk och är föremål för ett omfattande, kommersiellt fiske, framför allt med bottentrål[5]. En del av fångsten exporteras, bland annat till Japan.[3] Det har framförts farhågor om att den riskerar att utfiskas i Mellanatlanten.[4]
