Phytolacca americana (American pokeweed, pokeweed, poke) es fa servir en medicina popular i com aliment bàsic, durant dècades, a la gastronomia del sud dels Estats Units.[9] Totes les seves parts són tòxiques fins que se l'acondiciona adequadament.[10] El tint que proporciona el feien servir els indoamericans per decorar els seus cavalls. També va servir de tinta per escriure.
La Phytolacca dioica és una arbre ornamental molt utilitzat, també a Barcelona, per exemple a la Plaça Francesc Macià.

Det danske navn kommer af det persiske ord kermes (= ”rød”). Det botaniske navn kommer af græsk φυτών (phyton) (= ”plante”) + latin lacca (= ”lak”). Det er stauder med en opret, forgrenet vækst. Stængler og blade er hårløse. Bladene er hele og spredtstillede med tydelig spids og en kruset rand. Blomsterne sidder samlet i endestillede klaser, og de er regelmæssige og hvid-grønne. Frugterne er bær.
Kermesbær indeholder stofferne phytolaccatoxin og phytolaccigenin, som begge er giftige for pattedyr (herunder mennesker), mens fuglenes fordøjelse skåner dem for giften.
Træagtig Kermesbær (Phytolacca dioica) er vildtvoksende på de sydamerikanske pampas, hvor de kaldes ombú. De bliver små træer og er nogle af de få planter, der giver skygge i de åbne græsstepper. Det har gjort planten til et symbol for gauchokulturen og Argentina.
Her beskrives kun den eneste art, som hyppigt findes forvildet (og næsten ukrudtsagtig) i danske haver.

Die Kermesbeeren (Phytolacca) sind eine Pflanzengattung innerhalb der Familie der Kermesbeerengewächse (Phytolaccaceae). Der deutsche Trivialname Kermesbeeren stammt vom persischen Wort قرمز qermez für rot.
Bei Phytolacca-Arten handelt es sich meist um ausdauernde krautige Pflanzen, selten Sträucher oder Bäume, die Wuchshöhen von etwa 1 bis 2 Metern erreichen. Der meist aufrechte, selten kletternde, bleistiftförmige, gefurchte oder kantige Stängel ist manchmal rötlich. Neben jungen Stängeln sind manchmal die Blütenstände behaart, sonst sind die Pflanzenteile unbehaart. Die Wurzeln sind meist dick und fleischig. Die meist gestielten Laubblätter haben eine einfache Blattspreite.
Fünf bis hundert gestielte oder ungestielte Blüten stehen in endständigen oder den Blättern gegenüberstehenden, traubigen, ährigen oder zymösen Blütenständen zusammen.
Die meist zwittrigen Blüten sind radiärsymmetrisch und fünfzählig. Es sind nur fünf bis manchmal acht Blütenhüllblätter vorhanden; sie sind während der Blütezeit meist grünlich-weiß und vergrößern sich und werden rot während der Fruchtentwicklung. In ein oder zwei Kreisen stehen meist zehn (6 bis 33) Staubblätter; sie sind frei oder an ihrer Basis verwachsen und können aus der Blütenhülle herausragen oder nicht. Es sind 5 bis 16, selten bis zu 30 Fruchtblätter vorhanden; sie sind frei oder verwachsen. Wenn die Fruchtblätter verwachsen sind, dann ist der Fruchtknoten fast kugelig. Es sind gleich viele freie, pfriemförmige Griffelchen (Stylodien) wie Fruchtblätter vorhanden.
Als Früchte werden meist fleischige, abgeflachte Beeren, mit meist sechs bis zwölf (selten bis zu 30) Samen, gebildet, die bis zu gleich viele Lappen besitzen wie Fruchtblätter daran beteiligt sind; oder es werden einsamige, achänenähnliche Früchte gebildet. Die schwarzen, glänzenden Samen sind nierenförmig bis zusammengedrückt mit einer harten, zerbrechlichen, unbehaarten Testa.
Die Verbreitung der Gattung Phytolacca ist fast kosmopolitisch, allerdings sind die meisten Arten ursprünglich in Südamerika heimisch, insgesamt gibt es in der Neuen Welt mehr Arten als in der Alten Welt; nur wenige Arten haben ihre natürliche Heimat in Afrika oder Eurasien. Einige Arten sind weltweit invasive Pflanzen. Kermesbeeren-Arten (Phytolacca) kommen überwiegend im tropischen bis subtropischen Raum und in Weinbaugebieten vor. Verwilderte Arten sind auf der ganzen Welt zu finden.
Die Gattung Phytolacca wurde durch Carl von Linné aufgestellt.[1] Der botanische Gattungsname Phytolacca kommt zum Teil vom griechischen Wort φυτόν (phyton) für „Pflanze“ und zum anderen vom lateinischen lacca für „Lack“ und bezieht sich auf das Aussehen der Beeren. Ein Synonym für Phytolacca L. ist Pircunia Bertero ex Ruschenb.[2]
Die Bestimmung der Arten ist schwierig, dies führte zu vielen Synonymen. Es sind etwa 25 bis 35 Phytolacca-Arten bekannt, hier eine Auswahl:
Keine der Arten ist in Mitteleuropa heimisch, sondern sie zählen in Mitteleuropa zu den Neophyten. Ob eine schädliche Wirkung auf die einheimische Flora vorliegt, war 2002 noch nicht bekannt[5]. Die Landauer Geoökologin Constanze Buhk warnt, „nach neueren Studien hätten selbst Buchen Schwierigkeiten, auf dem Boden, der von Phytolacca spec. belastet ist, überhaupt keimen zu können. Das mache sie dann entsprechend so konkurrenzstark und damit gefährlich“.[6] „In vielen Gärten Süddeutschlands findet man sie inzwischen als ‚Dauer-Gast‘.“
Für Säugetiere sind sie aufgrund der Triterpensaponine (Phytolaccagenin) und Lectine gering giftig bis giftig. Die Konzentration der giftigen Inhaltsstoffe nimmt wie folgt ab: Wurzel, Blatt, Stamm, Frucht unreif, Frucht reif.[7]
Wegen der Giftstoffe müssen nahrungsmitteltaugliche Produkte der Kermesbeeren behandelt oder entsprechend zubereitet werden. Die Beeren enthalten dunkelroten bis schwarzen Farbstoff, Betacyane (Phytolaccarot) ähnelt dem der Roten Bete. Sie wurden früher zum Färben von Rotwein, Likör sowie Gebäck verwendet, wegen der stark abführenden Wirkung wurde dies jedoch verboten. Auch wurde er zum Einfärben von Korbwaren, Wolle, Seide, Leder und für Schminke verwendet.[8][9] Die Indische Kermesbeere und die Zweihäusige Kermesbeere wurden ebenfalls zum Färben verwendet.[10] Um Wolle fuchsinrot zu färben, wird die mit Alaun oder Weinstein vorgebeizte Wolle in einen mit Essig gesäuerten Extrakt des Farbstoffes getaucht.
Die Blätter haben eine elliptische Form. In Amerika werden junge Blätter der Kermesbeeren (engl. pokeweed) ähnlich wie Spinat zubereitet. Pokeweed wird in den USA auch als polk salad bezeichnet und spielte in der Küche Louisianas früher eine wichtige Rolle.[11] Tony Joe White schrieb darüber den Song Polk Salad Annie, der auch von Elvis Presley gecovert wurde.
Die Sprossen haben spargelähnlichen Geschmack.[12]
Im Jahr 1989 erhielten Aklilu Lemma und Legesse Wolde-Yohannes für ihre profunde Erforschung der Eigenschaften der Endod-Pflanze (Phytolacca dodecandra) als preiswertes Vorbeugungsmittel gegen Bilharziose sowie für ihren Kampf zur Überwindung der Voreingenommenheit der westlichen Medizin gegenüber der Forschung der Dritten Welt den Right Livelihood Award.[13]

Some members of the genus are known as pokeweeds or similar names such as pokebush, pokeberry, pokeroot or poke sallet.[2][3] Other names for species of Phytolacca include inkberry and ombú. The flowers are greenish-white to pink, produced in long racemes at the ends of the stems. They develop into globose berries 4 to 12 millimetres (0.2 to 0.5 in) diameter, green at first, ripening dark purple to black.[5][6][7]

The ombú (Phytolacca dioica) grows as a tree on the pampas of South America and is one of the few providers of shade on the open grassland. It is a symbol of Uruguay, Argentina and gaucho culture. P. weberbaueri from Peru also grows to tree size. Both species have massively buttressed bases to their trunks, and very soft wood with a high water storage capacity which makes them resistant to grass fires and drought.[11]
In the Pacific Northwest of North America, pokeweed is an invasive species.
Phytolacca americana (American pokeweed, pokeweed, poke) is used as a folk medicine and as food, although all parts of it must be considered toxic unless, as folk recipes claim, it is "properly prepared." The root is never eaten and cannot be made edible.[12] Poke salad ('poke salat') is considered part of traditional southern U.S. cuisine, where it is cooked three times in three changes of boiling water to remove some of the harmful components.[13] Toxic constituents which have been identified include the alkaloids phytolaccine and phytolaccotoxin, as well as a glycoprotein.[14]
A Phytolacca-like fossil has been described from the Upper Cretaceous (late Campanian) Cerro del Pueblo Formation, Coahuila, Mexico, it is a permineralized multiple infructescence composed of berries with six locules, each containing a single seed with a curved embryo developed in a curved ovule with pendulous placentation, a berry anatomy that is similar to that of the genus Phytolacca. Though this new plant from Coahuila shares reproductive characters with Phytolacca, the constant number (six) of carpels per fruit and pendulous placentation support the recognition of a new genus, Coahuilacarpon phytolaccoides.[15]

La genro Fitolako estas preskaŭ kosmopolita, sed la plej multaj specioj hejmiĝis origine en Sudameriko. Entute en la Nova Mondo ekzistas pli da specioj ol en la Malnova Mondo. Nur malmultaj specioj havas sian naturan hejmlokon en Afriko aŭ Eŭrazio. Kelkaj specioj estas tutmonde invadaj plantoj. Fitolako troviĝas precipe en tropikaj ĝis subtropikaj regionoj, sed ankaŭ hejmiĝas en vinklimatoj.
La nomo Phytolacca venas de la greka vorto φυτών (phyton) por "planto" kaj de la latina lacca por "lako" kaj rilatas la la aspekto de la beroj. Sinonimo por Phytolacca L. estas Pircunia Bertero ex Ruschenb.[1]

Neniu fitolaka specio hejmiĝas en Mezeŭropo, sed ili apartenas al la invadaj specioj. Ĉu ili damaĝas la indiĝenan flaŭron en 2002 ankoraŭ ne estas konata.[2]. En multaj ĝardenoj de Sudgermanio la genro estas „ĉiutaga gasto“.
Por mamuloj la planto estas pro la triterpensaponinoj (fitolakogenino) kaj Lektino veneneta ĝis venena. La koncentrado de la venenajsubstancoj malaltiĝas la jena vico: radiko, folio, tigo, nematuraj fruktoj, maturaj fruktoj. La homeopatio uzas ekstrakoj el la radiko ĉe gripo, angino kaj (artika) reŭmatismo, kaj kontraŭ mamnutraj problemoj aŭ mastito.
Pro la veneneco produktoj de fitolakom kiuj estas uzata por nutri devas esti speziale traktataj. La beroj enhavas malhelruĝan ĝis nigran farbsubstancon, kiu povas esti uzata por kolorigi nutraĵojn. Laŭ diversaj fontoj la kolorigado de ruĝa vino per fitolakaj beroj dum la tempo de reĝo Ludoviko la 14a estis malpermesata je minaco de mortpuno.
La nordamerikaj indiĝenoj uzis la sapon por farbi plektaĵojn. Por farbi lanon fuksioruĝa oni metis la lanon en tinkuro de aluno aŭ kalia dutartrato kaj poste en la farbsubstancon aldonite vinagron.
En Ameriko la juna folioj estas preparita simile al spinaco (angle pokeweed) . „pokweed“ ankaŭ havas la nomon polk salad . Ĝi apartenas al la luiziana kuirejo. Tony Joe White faris la kanton Polk Salad Annie, kiun Elvis Presley ankaŭ kantis.

Las hojas jóvenes de Phytolacca americana se hierven tres veces para reducir la toxina, cambiando el agua después de cada hervor. El resultado es una ensalada y ocasionalmente disponible comercialmente. Aunque se hierva tres veces, quedan trazas de la toxina. Cuando se fríe, pierde totalmente esas toxinas, y queda de un rico sabor tropical.[2]
En 1989, Akliku Lemma y Legesse Wolde-Yohannes recibieron el Right Livelihood Award por su investigación sobre la planta Phytolacca dodecandra como medida preventiva para tratar la esquistosomiasis.[cita requerida]
Las bayas dan una tinta roja y un tinte muy usado por los nativos americanos para decorar sus cabalgaduras. El jugo rojo ha sido usado para simbolizar sangre, como las protestas contra la esclavitud de Benjamin Lay.[cita requerida]
Sirve como planta ornamental, principalmente por sus bellos frutos.
El género fue descrito por Carlos Linneo y publicado en Species Plantarum 1: 441. 1753.[3] La especie tipo es: Phytolacca americana L.
Phytolacca: nombre genérico que deriva de las palabras griegas: φυτόν ( Phyton ), que significa "planta", y la palabra latína lacca = "un rojo tinte".[4]

Phytolacca americana originaire des États-Unis, une grande plante aux fruits noirs ridés en grande grappe (le jus, pourpre, toxique, est utilisé en teinture), connue sous le nom de « raisin d'Amérique ». Cette plante était utilisée pour teinter artificiellement le vin. Elle pousse encore librement autour des centrales vinicoles de l'Hérault (Marseillan).
Très toxique et « facteur de déforestation » : par sa toxicité, elle étouffe les plantes de sous-bois (sauf la ronce et la fougère) et tue les jeunes pousses de pins et de chênes. Elle a parfois fait l'objet de campagne d'arrachage dans les forêts d'Île-de-France, par exemple en 2009, par le Club Alpin Français local[2].

Possiedono molti stami che si presentano al termine di peduncoli (possono raggiungere i 10 cm) raggruppati in lunghi (fino anche a 15 cm) grappoli penduli e alla maturità producono bacche carnose di un colore porpora tendente al nero. Poiché il genere comprende specie sia erbacee che arboree, il fusto può raggiungere dimensioni variabili. Le radici sono fusiformi.
Queste piante sono originarie dell'America, dell'Asia orientale e della Nuova Zelanda e sono state inizialmente importate probabilmente come specie ornamentale o per le proprietà medicamentose. Oggi alcune di queste specie sono presenti nelle regioni mediterranee allo stato spontaneo e selvatico. L'habitat preferito è rappresentato da terreni incolti, campi, giardini, margini di strade e luoghi incolti in genere, sia in pianura sia in collina; preferisce terreni freschi e ricchi di humus.

Le fitolacche contengono diversi composti tossici, tra cui saponine, la fitolaccatossina (o fitolaccina), un alcaloide presente soprattutto a livello delle radici e la fitolaccigenina nelle foglie.
Sebbene queste proprietà tossiche siano conosciute da molto tempo, anche questa pianta, come altre piante velenose, viene citata in supposte preparazioni della pseudoscienza chiamata omeopatia, tuttavia per i dosaggi e diluizioni indicati in tale pratica, non vi è più nulla della pianta in oggetto. È considerata una pianta dotata di azione emetica, purgativa e depurativa a seconda della posologia. Si ritiene che la bacca e la radice essiccate abbiano proprietà antinfiammatorie ed immunostimolanti. Come decotti o unguenti era impiegata nel trattamento di psoriasi e tigna. Più frequente ed attuale risulta l'impiego della fitolacca sotto forma di gargarismi ad azione antinfiammatoria, nel trattamento delle angine e delle tonsilliti.
La bacca ed i giovani getti sono meno tossici delle altre parti, ma contengono comunque dosi di tossina possibilmente letali per neonati o altri soggetti, le indicazioni che seguono non sono consigliabili. I giovani getti vengono consumati come asparagi (fintanto che non presentano il tipico colore rossastro, indice della presenza della sostanza tossica), mentre i germogli e le giovani foglie possono essere consumati come spinaci, ma solo dopo ripetute bolliture cambiando l'acqua.
Il succo della bacca, viene utilizzato talvolta come colorante per l'industria dolciaria e per il vino.

As espécies integradas no género Phytolacca são herbáceas de 30 cm a 15 m de altura, com folhas simples alternas, afiladas, com margens rugosos. Frequentemente o caule apresenta coloração rosa ou roxa. As flores são branco-esverdeadas, em longas cachos no final dos ramos. O fruto é uma drupa de coloração púrpura ou negra quando madura.
A espécie Phytolacca dioica, a bela-sombra, é uma planta arborescente que cresce de modo semelhante a uma árvore nas pampas da América do Sul, dando sombra nas extensas pastagens naturais daquela região. É um símbolo da Argentina e Uruguay e da cultura dos gaúchos.
As folhas jovens de algumas espécies são utilizadas para alimentação humana, mas são fervidas três vezes para reduzir o seu teor em toxinas, mudando de água após cada fervura. O resultado é uma salada, ocasionalmente disponível comercialmente. Contudo, ainda que fervida várias vezes, ficam sempre traços das toxinas.
Em 1989, Akliku Lemma e Legesse Wolde-Yohannes receberam o prémio Right Livelihood Award pela sua investigação sobre o uso da espécie Phytolacca dodecandra como medida preventiva para a esquistossomíase.
As drupas quando esmagadas produzem um corante vermelho muito usado pelos ameríndios para decorar os seus cavalos. O sumo vermelho tem sido usado para simbolizar sangue, nomeadamente durante as manifestações contra a escravatura de Benjamin Lay.
Serve como planta ornamental, principalmente pelos seus belos frutos.
O género foi descrito por Carolus Linnaeus e publicado em Species Plantarum 1: 441. 1753.[2] A espécie tipo é Phytolacca americana L. O nome genérico Phytolacca tem como etimologia a palavra grega φυτόν ( phyton, "planta") e a palavra latina lacca ("laca").[3]
